Leftover Hot Links/Sausage Tacos
Last night we had Robert's side of the family over for Thanksgiving dinner. We had a huge feast! My in-laws brought some hot links and they had said that the hot links would be good chopped up with some onions for breakfast. So that really inspired me to get in the kitchen and whip these up. I got in the zone tonight.
I started with five Hot Links and added six sausages. I chopped them up and mixed them together in a hot skillet.
While the sausage were cooking in the skillet I chopped up a large pinch of cilantro, 1 tomato, and half a small onion.
When the sausage was all cooked, I drained the grease, and put the sausage back in the skillet.
I also put in my cilantro, tomato and onion.
While I let the veggie cook down and make a yummy mixture. I grating some Monterey Jack cheese. I ended up with about a cup and a half of cheese.
I added some Parmesan cheese to my sausage and veggie mixture. And warmed up some tortillas in the microwave.
My sausage and veggie mixture is looking awesome and ready to eat!
I spoon a good amount of the sausage mixture onto each tortilla.
I then a some of the Monterey Jack cheese to each tortilla.
I rolled them up like burritos.
And there you have it my Sausage/Hot Link Tacos!
We were going to take a picture of the kids eating them but they went way to fast and we didn't have time. That's always a good sign. I would like to thank my in-laws for the inspiration for this meal and the hot links I use . I would also like to thank my husband Robert for taking the pictures for me he did a awesome job.
